Pre-Christmas Winter Menu

Long time no see! Haven't been updating lately, sorry for that.
Anyway, yesterday I decided to treat my family with a menu I created myself and it was a big success! I spent the whole Saturday preparing creams and cakes but it was definitely worth all the work.
Well, let's move on to the menu.

Starter: Matcha pancakes with sour cream and smoked salmon. This idea came to my mind while I was browsing through a french cooking magazine and even though I made something else out of the original recipe, it still turned out great! (Matcha is Japanese green tea powder) Due to the strong taste of smoked salmon, you could not really taste the Matcha but the pancakes were also wonderful with only sugar!

Main dish: Duck breast with a gingerbread sauce, baked apples & cranberry filling, spaetzle and Brussels sprouts. I found the recipe for the sauce on the internet ages ago and figured it would taste perfect with duck meat, and yes, I was right. Unfortunately, this is a real winter recipe and can't really be enjoyed in spring or summer.

Dessert: The originally planned winter trifle made way to "les trois délices au chocolat et à l'orange" which came to my mind spontaneously. It consists of an orange cream with Grand Marnier and cinnamon, a mousse au chocolat with chili and an orange cocoa flavoured marbled cake. The orange cream was my favourite, followed by the mousse au chocolat, however, it didn't turn out as spicy as I had expected. Probably because this time, I used fresh chili instead of the dried ones. I do think my family appreciated the less spicy version more ;)
